It is generally called Baking Paper or Parchment Paper.
Fresh Bake has many advantages over other common baking papers; firstly, it has an exceptional moisture barrier created by the 1.2g per square meter of silicone coating. Fresh Bake also has unique properties, giving the baker more bakes per sheet, easier release, and less browning, and also, these properties, make it an ideal packing material for a number of other products such as: cheese, bakery products, fish, meat, frozen foods/trays, pastry and chocolates.
> Furthermore, FRESH BAKE is a high quality premium sheet (or roll) produced exclusively for the bakery market; its release characteristics, heat resistance, grease resistance and wet strength are exactly what Bakers Require.
> We produce in either SHEETS or ROLLS, they are the same, it just depends on what you are more accustomed to using. Sizes are standard and fit perfectly in most OVEN TRAYS.
> Recommended maximum temperature for single use is 260°C, whereas for multiple uses it is around 235°C.
A common use for FRESH BAKE is to eliminate the need to grease sheet pans and the like, allowing very rapid turn-around in batches of baked goods. Parchment paper is also used to cook en papillote; a technique where food is steamed or cooked within closed pouches made from baking paper.
